Quick Avocado Chicken Salad

Ingredients

  • 20 ounces cooked chicken, shredded
  • ½ cup plain fat-free Greek yogurt
  • ¼ cup finely minced onion
  • ¼ cup crumbled cotija cheese
  • ¼ cup chopped fresh cilantro
  • ½ jalapeno pepper, seeded and chopped
  • 1 avocado - peeled, pitted, and diced
  • ½ lime, juiced
  • 1 pinch salt
  • 1 pinch ground cumin

Cooking Directions

  1. Stir chicken, yogurt, onion, cotija cheese, cilantro, and jalapeno pepper together in a large bowl. Gently fold avocado into chicken mixture until salad is evenly distributed. Stir lime juice, salt, and cumin into salad.
Microwave lime for 10 to 15 seconds and use a fork to juice it. You'll get the pulp and so much more juice.
