Ingredients

  • 5 large potatoes, quartered, or to taste
  • 4 hard-boiled eggs, diced
  • 4 green onions, sliced
  • 1 (12 ounce) container blue cheese dressing (such as Marie's®)
  • 1 (8 ounce) container sour cream
  • 1 pinch salt and ground black pepper to taste

Cooking Directions

  1. Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and let cool, about 15 minutes.
  2. Cut potatoes into chunks; transfer to a large bowl. Stir in hard-boiled eggs and green onions.
  3. Mix blue cheese dressing, sour cream, salt, and pepper together in a bowl. Pour over potato mixture; stir gently until blended. Chill until flavors combine, about 2 hours.
